February 27, 2026 — La Paz city hall in Bolivia designated Papaya Salvietti, a century-old local papaya-flavoured soda, as the city's intangible cultural heritage.

The soda's maker has been in business for more than 100 years.

La Paz city hall announced on February 27 that Papaya Salvietti, a locally made papaya-flavoured soda, has been designated intangible cultural heritage of La Paz under Municipal Law 577/2025.

"We paceños have Salvietti, we should feel proud that this product is ours, that it belongs to us. Thanks to the Salvietti family, this recognition is well deserved," said La Paz mayor Ivan Arias at the ceremony, encouraging residents to consume domestically made products.

According to the Municipal Secretariat of Cultures, the soda was recognized for its historical value, its long presence in the market, and its role as part of traditional, popular gastronomy tied to the image of La Paz.

Salvietti has been in business for more than 100 years. According to the company, the story began when Italian entrepreneur Dante Salvietti travelled to the Yungas region of La Paz department, was captivated by the region's papaya, and found a way to concentrate its pulp, creating what has since become a Bolivian tradition.
